What is Canning?
Canning is the process of filling the product, which is free from microorganisms by heat treatment, into cans, glass jars or similar containers suitable for the purpose and closing the containers in an airtight manner.
Canned foods are easy-to-use, durable foods. We can say that it is a safe food product. This does not mean that canned food is not spoiled. The slightest negligence and carelessness in production causes negative quality changes before heat treatment, after heat treatment and during storage. And microbial, chemical, physical degradation occurs.
How to choose Canned Foods?
In order to reduce the risk in canned food, there are some points that we should pay attention to when purchasing. These:
The expiration date must be checked first. Expired products should not be consumed.
There should be no damages such as holes, tears or cracks in canned containers. Microbiological risk is high in such damaged containers.
There should be no leakage in the canister. There may be very small holes and we cannot see it visually. You can turn the canister upside down to check.
Care should be taken that there is no bombardment in the box. Bomb formation occurs when the canister is corroded and hydrogen gas is formed. Or, if there are gas-producing bacteria such as Clostiridium botulinum in the box, they also create bombardment. This bacterium causes poisoning. Some types of microorganisms (Clostridium nigrificans) are also unable to form gas from carbohydrates. Since the gases such as H2S they generate can dissolve in water, they do not create bombardment. The outer appearance of the box is normal. However, when the can is opened, a bad odor spreads and color darkening has occurred.
